Dehydrated Vegetable Sabji (Mixed Vegetable Curry) Recipe

Ingredients:

  • 1/4 cup dehydrated cauliflower
  • 1/4 cup dehydrated carrots
  • 1/4 cup dehydrated beans
  • 1/4 cup dehydrated potatoes
  • 1 large onion, finely chopped
  • 2 medium tomatoes, pureed
  • 2-3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit (optional)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder (optional)
  • 1 teaspoon mustard seeds (optional)
  • 2 tablespoons oil or ghee
  • 3-4 cups water (for rehydrating vegetables and cooking sabji)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Rehydrate Vegetables:
    • Place the dehydrated cauliflower, carrots, beans, and potatoes in a bowl. Add 2 cups of warm water and let them soak for 20-30 minutes until fully rehydrated. Drain and set aside.
  2. Prepare the Spice Base:
    • In a large pan, heat the oil or ghee over medium heat.
    • Add mustard seeds (if using) and cumin seeds. Let them splutter.
    • Add the chopped onions and green chilies. Sauté until the onions turn golden brown.
    • Add the minced garlic and grated ginger. Sauté for 1-2 minutes until the raw smell disappears.
  3. Cook the Masala:
    • Add the pureed tomatoes to the pan and cook until the oil starts separating from the masala, about 5-7 minutes.
    • Mix in the turmeric powder, coriander powder, cumin powder, red chili powder (if using), and salt. Cook for another 2 minutes to blend the spices.
  4. Cook the Vegetables:
    • Add the rehydrated vegetables to the pan and stir well to coat them with the masala.
    • Pour in 1-1.5 cups of water, depending on the desired consistency of the curry. Stir to combine.
    • Cover the pan and let the sabji simmer on low heat for 10-15 minutes, or until the vegetables are tender and the flavors have melded together.
  5. Finish and Serve:
    • Stir in the garam masala and cook for another 2 minutes.
    • Garnish with fresh coriander leaves.
    • Serve hot with roti, naan, or rice.
